Eating In: Recipes I will add more recipes of my own and some that are our favourites, as this site grows. Here are a few to start out with. Breakfast Egg on Potato Latke (Find the Potato Latke Recipe on page: "More Recipes 1")
A delicious and hearty breakfast is fried egg on a latke or two. Make the savoury latke recipe beforehand. (Latkes freeze wonderfully between layers of wax paper) To thaw, just pop into your toaster (low setting) while frying the egg. Sprinkle with chopped spring onions, salt and pepper to taste and ENJOY!
Souffle-style Pancakes
Not your thin crepes-style pancake, but a lovely thick, satisfying 'crumpet'. Make for breakfast (covered with syrup) or for dessert (with for eg. a strawberries-and-cream filling) 3 Eggs, 1 cup cold water, 1 cup cake flour (combined until well blended; must be runny enough to pour into pan) A little oil in heated pan. Fry until golden brown on both sides and either cover generously with cinnamon sugar or pour some syrup on.
Lunch Pesach-style Pizza
A wonderful alternative to pizza-crust is using a sheet of Matso. Blitz a tin of tomato & onion relish and add pizza-herbs. Spread thinly on your Matzo-base. Sprinkle with Mozarella cheese. Add your favourite toppings and pop into a 200'C pre-heated oven. (lowest shelf) Wait until the cheese bubble and remove. Enjoy with family and friends!
Dinner BBQ Chicken Stir-Fry
I found a wonderful kosher recipe for homemade BBQ-sauce, so cook up a batch of your own or buy from your local supermarket. Cut 2 chicken breasts into long, thin portions and fry in a little sesame oil. Add capsicum (sweet peppers) for colour and some soy sauce for taste. When lightly browned, add a generous quantity of BBQ-sauce and simmer for about 15 minutes. In the meantime, prepare Basmati Rice per the instructions on the packet. Then all that is left to do is to dish up and put out chopsticks! So EASY!!
